Chicken Tortilla Soup


 

Ingredients:
1/2-3/4lb favorite chicken pieces
10 cups water
6-8 bouillon cubes
1 1/2 tsp Chili Powder
2 tbs Cumin
1 can Yellow or White Corn
1 can diced tomatoes
1 can your choice of beans
1 bag Shredded Cheese
1 bag Tortilla Chips

Directions:
Boil your chicken in the water, bouillon, chili powder, and cumin for 1/2 hour.  If you are using chicken with bones in them, take the chicken out and peel all the meat off.  If you are using boneless meat, take the meat out and shred it.  Put meat back in the pot.  Add the corn, tomatoes, and beans and simmer for another 1/2 hour.
Serve with tortilla chips crumbled in the bottom of the bowl and shredded cheese scattered on top.

Lasagna a la Kristina


Ingredients:
1lb ground beef
1 package spicy Italian sausage
2 jars Classico brand Spaghetti
1 small package of sliced mushrooms
16oz bag of shredded Mozzarella
1 8oz container of Ricotta cheese
6 large lasagna noodles

Directions:
Brown both the sausage and the ground beef.  Pour the spaghetti sauce and sliced mushrooms into a large pot.  When the meat is cooked, put it in the spaghetti sauce as well.  Boil your lasagna noodles for about 10 minutes.  In the bottom of a lasagna dish put a layer of spaghetti sauce mixture, ricotta, and shredded mozzarella cheese.  Top with 3 noodles.  Repeat process and end with spaghetti sauce mixture, ricotta, and shredded mozzarella cheese.  Make sure you put a LOT of mozzarella on top!  That makes it very tasty!  Serve with pesto-garlic bread.  You will be a hit!


Twice Baked Potatoes


Ingredients:
6 Jumbo Potatoes
15 cloves garlic
1/4 cup milk
1/2 cup bacon bits
1 8oz sour cream
1 stick butter
1 bag shredded cheddar cheese

Directions:
Preheat oven at 450 degrees.  Bake potatoes for an hour and a half.  Bake the garlic wrapped in foil for 45 minutes.  When potatoes are done baking, turn the oven down to 350 degrees.  Cut the potatoes length-wise, making little potato boats.  Scoop out all the potato inside each half.  Place in a large bowl.  Add the 1/4 cup milk, 1 stick butter, and garlic.  Blend for 1 minute.  Add 8oz of sour cream, 1 cup of the shredded cheese, and 1/4 cup bacon bits.  Blend until smooth consistency.  Scoop potato mixture into each potato half.  Add more shredded cheese and bacon bits to the top of each potato.  Place in the oven for 20 minutes.  Serve with your favorite meat!


Yen's Recipes

Yen's Salad Dressing

1Tbs. soy sauce
1Tbs. sugar
2Tbs. lemon juice
2Tbs. balsamic vinegar
1/4 cup olive oil

*optional additions:
1 Tbs. ginger juice
(to get ginger juice, freeze ginger root overnight, squeeze juice next day)
1 Tbs. sesame oil

Yen's Wontons
1/2 pound of ground pork;
1/2 can finely chopped water chestnuts;
green onion (just the green section)
soy sauce as desired; 1 egg; tsp. salt and tsp. sugar

Take the wraps and fill with approx. 1 tsp. of mixture. Use an extra egg white to help hold wrap together.  Set wontons aside.

Making the soup for wontons:
Boil some water witha  little salt and oil.  Add finely chopped carrots, frozen peas, thinly sliced mushrooms, and 1 chicken boullion.  After soup starts boiling, add wontons and boil for 10 min.  After done, top it off with green onions.

Yen's Cashew Chicken Sauce
Mix together approx. 3 Tbs. of Oyster Sauce (you can add a little water to it), 1/4 cup of soy sauce, 1 Tbs. of sugar, and 1 Tbs. of salt.
In separate bowl add a heaping tbs. of corn starch and water.  This will help thicken the soupy mixture above.
In a pan take 1 tsp. of oil and 1 heaping tsp. of minced garlic.  As soon as the garlic and oil start to turn a little yellow, add the soy and oyster sauce mixture.  Bring the mix to a boil then add the cornstarch and water mix to thicken the sauce.

Yen's Egg Drop Soup
Boil 1/2 a saucepan of water with 1 chicken boullion cube
1 tsp. salt
1 tsp. soy sauce
1 tsp. flour

In a bowl mix up two eggs.  In a second bowl add 2 tbs. of cornstarch and water.  When the mixture is at a boil, pour in eggs and stir, top off with green onions.


Kristina's Yummy Stir-Fry


Ingredients:
Favorite meat- chicken, beef, pork
Teriyaki to taste
Soy Sauce to taste
2 bags favorite frozen vegetable stir fry
4 Garlic Cloves
2 cups prepared rice
1 chicken boullion cube


Directions:
In a large pan pour about a cup of water in the bottom.  Pour preferred spices over your meat and place them in the pan.  Simmer the meat until done.  Pour the juice in a bottle with a lid.  Turn the heat up on your burner.  Fill the pan up with the Stir Fry veggies, garlic, teriyaki, and soy sauce.  After you have cut up the meat into chunks, add it to the stir fry.  Add the 2 cups of rice.  Stir it around the pan for about 15-20 minutes.
For the sauce to pour over the meal:
Put a tablespoon of corn starch in the bottle with the lid.  Close and shake.  Get out a sauce pan and turn up the heat.  Add 2 cups of water and one chicken boullion cube to the sauce pan.  Add a tsp of soy sauce and 2 TBS. of teriyaki.  Once it is at a boil add your cornstarch and juice mixture.  Stir until it is a creamy consistency.


Oatmeal Chipper Cookies

1 1/4 C butter flavored Crisco
1 1/2 C packed brown sugar
1 C Sugar
3 eggs
1 1/4 Extra Crunch PB
4 1/2 C Old Fashioned Oats
2 tsp. baking soda
1 C Chocolate chips
1 C Butterscotch chips
1/2 C Raisins

Combine sugar and crisco, beat well.  Add eggs. add PB and blend.  Put soda and oats in spearate container, mix together, stir in chips.  Bake a 350.  Mix should be thick.
